To say that I’ve been a bit obsessed with trying to replicate my favorite childhood comfort foods in the Insta Pot is an understatement. Why the instapot and not the old fashion way, you ask… because ain’t nobody got time to be in the kitchen all day while working a full time job.. One night over dinner, my coworker and I set out to find the best “arroz con pollo” recipe on Pinterest that met the following criteria: has the same ingredients our mothers’ recipe, was simple enough to make in under thirty minutes.
We decided on this recipe from Taste Better from Scratch. I didn’t measure any of the seasoning, instead I closed my eyes and let the spirit of my ancestors guide me. No really, I’ve never seen a relative of mine actually measure anything while cooking, and I wasn’t about to get roasted in the family group chat (if you know, you know). The end result was good. My husband request this dish at least once a week (probably to guarantee that he has one edible meal a week). I even decided to bring it to the Noche Buena (Christmas Eve) potluck at work and my coworkers were impressed.
